Can the person receive salary, pocket money, accommodation, meals or reimbursement? Can they undertake other work?

Answer not available

How long can they stay, can they change host/activity, can family accompany, and can the status be extended?

The visitor visa covers stays of no more than six months (short-term missionary work is a listed purpose); visitor visas grant a duration of stay of fourteen, thirty, sixty or ninety days. Visas for religious work are in principle single entry. Visitor visa holders permitted to stay sixty or ninety days whose visa bears no "no extension" remark may apply at National Immigration Agency service centres for a maximum of 120 or 90 days of extensions. Those intending religious work must obtain a visa from an overseas mission before entering; visa-exempt entry is not a route into it. The official source does not state whether the host can be changed or whether family may accompany.
